The Perfect Holiday Appetizer: Avocado Brie Bites

Ah, it’s the most wonderful time of the year:  the holiday party season where you’re tasked to “sign up to bring a dish” that you have no time to make.  Instead of heading to your local grocer’s market to feverishly hunt for something that looks like you made it but was actually made at 7am that morning and is oddly spongy and slimy by the time it gets to the party, I challenge you to try this recipe.

Granted it’s not super easy in that you actually have to cook it.  But, it tenfold trumps the slimy meat or veggie tray you were going to bring to that party anyway.  Find solace in the fact that this recipe is only 15 minutes-ish worth of cooking and 4 already-made ingredients.  You’ll see what I mean in a second. I also posit that if your pot-luck work-party is held after business hours, when you commit to cooking this recipe you can also commit to 15-coworker-free minutes to guzzle that glass of liquid encouragement it will take to head back out in your ugly sweater to join the party.

I’ve made this appetizer a thousand times and my favorite time to make it is the holiday season.  The dish itself is green, red and white.  How much more perfect for Christmas can it get?!  Answer:  it can’t. So, I know it’s hard and the holiday season is busy.  Give yourself the gift of simple cooking with countless compliments by making these avocado bites. It’s only 15 minutes of your life, and I promise, the return value is immeasurable.

 

Avocado Brie Bites

Serves: A party (or yourself for dinner)
Level: Super easy

INGREDIENTS:

  • 1 pkg sundried tomatoes, julienned
  • 1 loaf baguette, or similar crusty bread – cut into 1/2″ wide slices
  • 1 wheel brie cheese, rind removed and sliced (as best as possible)
  • 1 – 8 oz. container Wholly Guacamole Spicy or Chunky Avocado
  • Optional: Chipotle dipping sauce*

* Chipotle dipping sauce is simply a 1:1 ratio of mayonnaise and sour cream, with ground chipotle pepper (approx 1 tsp.) added.

DIRECTIONS:

Preheat oven at 350 degrees.  Slice bread and place on baking sheet.  Spray with cooking spray if so desired; place in oven in single line until just under golden brown.  Flip over and repeat on other side.

Once both sides of the bread are golden brown, remove from the oven.  Spread one teaspoon full of guacamole/avocado onto each slice of bread.  Top guacamole with a slice of brie cheese. Place back into the oven and cook until brie is gooey, 5-7 minutes.

Remove from oven and top with julienned sundried tomatoes.  Serve with dipping sauce if so desired.  Enjoy!
