Elegant Date Night Dinner in 10 Minutes

Save this dinner for a surprise Date Night with your loved one.  You’ll win a bunch of point.  Of course, your loved one must like scallops, squash and blue cheese – so, I guess if s/he isn’t into those ingredients you should probably stop reading now.  Sorry!

But!  If s/he DOES like these ingredients (and if you do, too) – make this.  Tonight! Your marriage is saved even if it didn’t need saving. Your husband, wife, boyfriend or girlfriend will praise the ground on which you walk.  Believe me.  That just happened for me before I wrote this post.  Actually, I believe his exact words were “Whoa.”  You betcha.  Another wife win.

This scallop dish looks elegant but it took me exactly 10 minutes to cook. I used seven ingredients (save salt/pepper), two of which were cooked in the microwave.

Here’s what you need:

  • Sea scallops
  • 1 bag of butternut squash
  • 1 bag of green beans
  • 1/4 cup blue cheese
  • 2 Tbsp. butter
  • 1/4 cup milk
  • 2-3 Tbsp. maple syrup

Ingredients

DIRECTIONS:

Pierce the bag of squash and the green beans with a fork.  Place the squash in the microwave for 5 minutes. Meanwhile, pat scallops dry and season with salt and pepper.  Melt butter in saute pan over medium-high heat.  Place scallops in pan (don’t overcrowd the pan) and cook; three minutes each side. When the scallops are about done, remove them from the heat and pour the syrup over the top.

Remove the squash from the bag, mash with potato masher.  Stir in milk with spoon, then stir in blue cheese. Place green beans in the microwave and cook for 2 minutes, more if you prefer softer green beans.

Build your plate by placing the squash down first.  Stack the scallops on top, garnish with more maple syrup if you desire.  Finish the plate with green beans.  Serve, with love.
